  1. BLANCHING; Get ready a pot of water in the sink for cooling. Heat another pot of water (enough for blanching) and blanch the water spinach for 10 seconds. After that, immediately submerge it in the cooling pot, with running water pouring over it until the water spinach has cooled.
  2. COOK THE PASTE; Add 2 Tbsp of cooking oil in a wok and heat it until hot. Add in the Sambal paste, lime juice, sugar and mix well. Cook until the oil separates and the colour turns. Season with salt if needed.
  3. ASSEMBLY; cut the Water Spinach into segments and place it on a serving plate. Pour the Sambal Sauce into the Spinach and serve.
