Steps to make Paan modak:
  1. In a bowl take 1.1/2 cup desicated coconut.
  2. Add 1/2 cup warm milk to it.
  3. Mix well to coat desicated coconut with milk and if required add more milk.do not soak it.
  4. Cover & rest for 30 mins.
  5. In a pan put desicated coconut 150 gms unsweetened khoya / mawa (crumble with hands before adding) 1/2 cup sugar.
  6. Switch on flame low & mix everything.
  7. Cook for 4 - 5 min till sugar melts.
  8. Add paste of 4- 5 betel leaves.
  9. Mix well & cook for 8 - 10 min on low flame till water is evaporated.
  10. Add 2.3 drops of grren food colour.
  11. Switch off flame.
  12. Add 1/4 tsp cardamom powder & 2 tbsp cut almonds,cashew nuts,gulkand & pistachios and mix.
  13. Transfer mixture to a bowl & allow it cool down completely.
  14. Grease modak mould with ghee alternative.you can also make small ladoos.
  15. Fill it with little mixture & close it to give it modak shape.
  16. Put modak in a plate.
  17. Prepare remaining modak in same way (step 15.16)
  18. Garnish with desicated coconut. (optional)
  19. Set in refrigerator 30 min & then serve.
